This super simple chili recipe is loaded with nutritious vegetables and packed with protein. Without adding beans, it is a great paleo-friendly, anti-inflammatory, and delicious dish! I love this recipe on a cold Winter night because it satisfies my craving for home-cooked, comfort food!
EASY BEANLESS CHILI
1 tbsp ghee, coconut oil, or avocado oil
1 pound grass-fed ground beef
2 small bell peppers, chopped
1 small yellow onion, finely chopped
4 large carrots or 1 medium sweet potato, cubed
2 Heirloom tomatoes, chopped
3 garlic cloves, finely chopped
3 cups vegetable stock
1 tsp sea salt
2 tsp smoked paprika
1 tsp cumin
1 tsp oregano
1/4 tsp cayenne pepper
Greek yogurt or sour cream
Corn chips or Siete tortilla chips
In a large pan or pot, add oil and saute the onion, bell pepper, and carrots over medium heat. Add ground beef and continue to cook for 3-5 minutes, or until the ground beef starts to brown.
Add tomatoes, garlic, vegetable broth, and all seasonings. Cover with lid and reduce heat to medium-low. Let simmer for 30 minutes.
Serve warm and top with desired toppings!
